Yeah! My hubby's home and it's back to real cooking this week! I have felt like such a slacker, but the schedule this past week was sort of crazy. I'm ready to have some routine at home again. That's just the way I am:)
And I'm ready for a date night with my hubby! So we've got that in the schedule:) We try to do that at least once a month. I'm so thankful that Vince is wonderful about date nights. They usually aren't fancy, just dinner and a movie (sometimes at the theater, sometimes a rental) mostly, but they are always good times together. I love it when we drive to eat about an hour away because then we have all that good talk time in the car! And talk we do! ...Those of you who are married: do you have date nights with your husband often? I highly recommend it!
Well, here's what's cooking this week:
Monday: Pot Roast, Carrots, Potatoes and Corn Fritters (trying some of my new all-grass-fed beef!)
Tuesday: Grilled Tuna Melts w/Chips
Wednesday: Tostadas
Thursday: Grilled Chicken Breasts, Creamed Spinach and Black-Eyed Peas (trying some of my new organic chicken!)
Friday: {DATE NIGHT!!}
Saturday: French Dip Sandwiches & Onion Strings

Good luck with your curriculum choices. We really do enjoy Apologia and Horizons. And Getty-Dubay is the best I have seen in handwriting!
We have our 18th anniversary coming up later this month but since we'll be gone (LOTS of travel at this stage of our lives with being part of Wycliffe's ministry) - we're going out this weekend. I love a quiet dinner with my hubby - love my 7 kids too - but an occasional date is good for parents AND kids!! :)
