This past week I needed something quick and easy to make on Sunday after church. While searching my recipes I found these tacos and thought they would be perfect. I was right--we loved them! Well, my overly-picky son didn't, but he doesn't like most things..ha The rest of us really enjoyed them though and there were no leftovers!
Wild West Chicken Tacos
2 cups cooked chicken, shredded
1/2 tsp. ground cumin
1/2 tsp. paprika
10-12 crunchy taco shells
1 cup bbq baked beans (from a can)
1 cup shredded cheddar cheese
4 slices bacon, fried crisp & crumbled

Heat oven to 400F. In a small bowl toss chicken with the cumin and paprika to coat.
In 8" square casserole dish stand taco shells side by side.
Fill shells evenly with seasoned chicken. Next top each with the baked beans.
Top the beans with cheese and finally the bacon bits.
Bake for 8 minutes or until thoroughly heated and cheese is melted.
Garnish with tomatoes and guacamole and enjoy!
