Well, its late in the day, but I've decided that its time to get back in the saddle again! I've been missing my menu plans. So here's what's cookin' for this week:
Monday: roast, carrots, potatoes, asparagus (leftovers)
Tuesday: BBQ stuffed potatoes (made with leftover bbq ribs & chicken)
Wednesday: taco salad (made from the Mexican night leftovers)
Thursday: Osaka's Japanese Steakhouse with the college ministry
Friday/Saturday: dining in Memphis with some girlfriends!
As you can see I've got a fridge full of leftovers from the past few days that I need to get creative with. So if you have any other great ideas for these leftovers, feel free to leave me a comment with all the details!

Last night at our youth service we had a time of appreciation for our youth coaches who volunteer so faithfully every week and go above and beyond the call of duty in making things happen in the youth department. So in honor of them, my hubby got creative in the kitchen! He decided to create the Pac-Man game board in CAKE! Here's a picture of the results, I just had to share this with you:)
Keep in mind that this is set up on two full-size folding tables. He actually whipped up those cakes mixes and tinted the frosting and decorated them--all by his lonesome(I was too tired from my yard sale to help)! Then he used Twinkies for the "dashes" and those little round "shortcakes" for the extra point thing-y's:) Yeah, my husband is an *all or nothing* kind of guy. It was a big hit with the teens and the coaches--very yummy, too.
