2 boxes long grain & wild rice mix
1 med. onion, minced
3 Tbls. butter, melted & divided
1 large apple, peeled, cored & chopped
1 egg, beaten
1 Tbls. parsley
1/8 tsp. thyme
salt & pepper
4 boneless, skinless chicken breasts

Prepare rice according to box directions. Saute onion in 2 tbls. butter. Combine rice, onion, apple, egg, parsley and thyme; stir well. Season to taste with salt & pepper. Pour mixture into a 9 x 13 baking dish. Place chicken breasts on top of rice dressing. Brush them with the remaining butter and salt and pepper them. Bake @ 350F for about 40 minutes or until chicken is done.

** I sometimes like to saute fresh mushroom along with the onions. It makes a nice addition. ***This recipe was originally for Cornish hens so they work great, too, and make a nice presentation.

Lora, that looks really wonderful. I like the idea of adding mushrooms. Another recipe to add to the menu! One of the great things about reading blogs is all the interesting recipes I have found over the past year. I'm sure Rick and the kids are very happy to have the new additions ;-)
