Oh. My. Word. I just made the most awesome fajitas!! I couldn't believe how delicious these were and how EASY they were to make. This is definitely a keeper--we'll be having it again soon.
Feisty Fajitas
1 beef flank steak (about 1 1/2 lbs.)
1/4 cup lime juice
1/4 cup olive oil
1/4 cup Worcestershire sauce
1/4 cup taco sauce
1 tsp. liquid smoke
1 clove garlic, crushed
1 picked jalapeno pepper, finely chopped
1 tbls. meat tenderizer
8 (8") flour tortillas
1 medium onion, cut into thick slices
1 red pepper, cut into thin strips
1 green pepper, cut into thin strips
1 yellow pepper, cut into thin strips
***********
Place steak in a shallow dish, and prick it all over with a fork. To make marinade: in a small bowl, combine the eight ingredients and stir with a whisk to blend. Pour marinade over the steak and cover with plastic wrap; let stand at room temperature for 2 hours turning every half hour before cooking. Preheat broiler. Lightly brush tortillas with oil and wrap in foil; set aside. Remove steak marinade and place in broiling pan. Toss onion slices and pepper strips in marinade. Broil steak 3" from the heat source for 6 minutes. Remove steak from broiler and turn to other side. Surround steak with onions and peppers in broiler pan and broil 6 more minutes. When steak is done, remove from broiler. Turn off heat and place wrapped tortillas in over for 5 minutes. Thinly slice steak and toss with onions and peppers to serve.

**A few notes from me:
1.) I only used green peppers
since the yellow and red are so pricey.
2.) I didn't have meat tenderizer, but I googled a substitute
and used about a tsp. of vinegar instead.
3.) Plan on needing more than 8 tortillas.
4.) I used pre-sliced fajita meat and that made this recipe even easier.
