Menu Plan Monday: January 5th-11th

Now that the holidays are over it's time to get back in the swing of things with my menu planning. This past week drove me nuts because I didn't have a plan in place. I have really come to rely on them, they make my weeks go so smoothly.

I have set a couple of cooking goals for this year. 1.) to make at least one meatless dinner a week and 2.) to try at least one new recipe from the cookbooks in my collection each week. This week I'm trying one from Rachel Ray YUM-O The Family Cookbook.

Monday: breakfast burritos (for dinner!)
Tuesday: pinto beans and cornbread
Wednesday: chicken enchiladas* with rice
Thursday: deep dish pizza (small group night)
Friday: cornflake crusted Talapia* (from RR's cookbook), baked potatoes and green beans
Saturday: fajitas* with cheesy fried potatoes
Sunday: roast, carrots & potatoes

*I plan to post these recipes with pics as I make them throughout the week.

Oh--and you may have noticed that I've changed up the sidebar a little. I've created links to some of my favorite recipes that I've posted and will continue to update that.

We've only just started getting Rachael Ray with the cable selection we have over here in the Uk, but I've enjoyed what I have seen.

I've been wanting to get a RR cookbook...I love her 30-minute meals show on The Food Network.

Breakfast burritos..yum!! The first time I had them was at your parents' house! It's still one of my favorite memories and I love them to this day!
