Menu Plan Monday: February 8th

I've already warned my husband...I'm going to be a *cooking fool* this week! Seriously! In case you didn't read my previous post, there are many cookies, cupcakes and casseroles in the works.

Nearly every night this week I have a casserole planned for dinner. I plan to serve half to us and freeze half for my sis-in-law and her family. She has some surgery coming up that is going to put her on her back for a few weeks, so I thought this would be a great way to help out. I know what a blessing it has been for us in the past when friends and family have brought meals during surgeries and the births of our babies. I am always glad to return the favor to others.

Quick question for you concerning freezer meals: do you usually thaw out the frozen meal before baking or do you bake it straight from the freezer? And how do you adjust the baking time? I have my own theories, but I'd like to hear your advice.

On the sugar front, I have hundreds of cookies to bake. Most for the box lunches being served by our church at our youth conference this weekend, the rest for us for Valentine's day. Because it's just not Valentine's day if your kiddos aren't all sugared-up!

Monday: Loaded Potato BBQ Casserole
Tuesday: Easy Enchiladas
Wednesday: Chicken Spaghetti
Thursday: Mexican Lasagna
Friday: {youth conference}
Saturday: {youth conference}

Great idea to double cook and stock up your sisters freezer. What a nice gift.

I usually thaw my freezer meals before cooking them - unless the directions tell me differently.

I have done some freezer cooking. You will find many recipes on my blog.

Generally, a casserole will need to go in the fridge a day or two before I bake it. I find that works best for me. I have a few recipes where you don't have to do that, such as Lasagna Rolls. They go into the spaghetti sauce frozen and thaw while cooking.
