
So...this week is St. Patrick's Day!! Do you celebrate that day? I must admit that growing up the only celebrating I ever did was to wear something green in order to avoid getting pinched at school...haha. I'm not sure that counts as celebrating. More like survival:)
This year is going to be a little different. Now, folks in Arkansas really don't go all out for St. Paddy's day or anything~at least, not like the East Coast. But we are going to have our very own family celebration. Maybe we'll create some new traditions. We actually have Irish ancestry on both sides of our families, plus our name is Irish. And the story of St. Patrick is really wonderful. So why not celebrate it, right?!
We are planning a traditional meal of *Corned Beef with Carrots & Potatoes* and *Irish Soda Bread*. The kiddos and I are going to make a *Rainbow Cake* and I got them some chocolate "gold coins" to celebrate the day. Of course, we'll watch the Veggie Tale story of St. Patrick and learn some more about him as well. All this while wearing green, of course. I'm looking forward to it!

Monday: (my family coming for dinner) Lexington-style Grilled Chicken, Baked Potatoes, Baked Beans, Salad, Rolls, Banana Pudding
Tuesday: Panini Salad (for me & Vince), mini pizzas (for the kiddos)...didn't get this one made last week
Wednesday: Old World Corned Beef and Vegetables with Irish Soda Bread
Thursday: Individual Chicken Pot Pies
Friday: (dinner out at a banquet)
