(The Victorian Sampler, Eureka Springs, AR)
1/2 small onion, chopped
3 Tbls. green pepper, diced
1 cup (before sauteing) mushrooms, sliced
2-3 Tbls. butter
3 eggs, slightly beaten
1-1/4 cups sour cream
Dash of salt
Dash of garlic powder
Dash of white pepper
Dash of Tabasco sauce
1-1/2 cups Swiss cheese, grated
1 cup mild Cheddar cheese, grated
5-6 slices of bacon, fried crisp & crumbled

Saute onion, green pepper and mushrooms with butter in a skillet until veggies are soft. Combine eggs, sour cream and seasonings thoroughly with a whisk. Stir in the sauteed veggies, cheeses and bacon and pour into the pastry shell. Bake at 350F for 35-45 minutes until set and lightly browned on top. You can do tons of variations on this basic recipe. Tonight I added in spinach~so yummy!

You're welcome:) It's actually been a while since I've made it, too. Vince & I used to have it all the time, but then I stopped making it for a while b/c the kids weren't into it. Last night though, The Princess seemed to like it pretty well~although Mr. B still wouldn't touch it:)
