Yesterday, on a complete whim, I decided to whip up some homemade ice cream. We have an ice cream maker that gets used (at the most) once a year, but I should really remedy that. Because I have the best~and easiest~ice cream recipe! I got it from my mom (aren't lots of our *best* recipes from our moms?:) I love this one though because it's so incredibly creamy and you don't have to cook the mixture before putting it in the freezer. You should totally try it!!
Mom's Homemade Ice Cream
(my mom, Evelyn)
4 eggs
2-1/2 cups sugar
2-1/2 pints whipping cream
1 pint half & half
2 tbls. vanilla (use the real deal!)
1/4 tsp. salt
Milk

In a large bowl, beat the eggs with a mixer until they are nice and foamy. Next, gradually add the sugar until the mixture is thickened. Then add the cream, half & half, vanilla and salt; mix well. Pour the mixture into the ice cream freezer can, adding milk to the *fill line*. Follow the directions for your ice cream freezer to make the ice cream. Makes 4 quarts.
**You can add all sorts of yummy stuff into this mixture to make different kinds/flavors!
