Menu Plan Monday: Aug 16th

We are on our way home today from a week-long trip. It's been a great week, filled with fun with the kiddos, seeing old friends and meeting new ones. But I'm looking forward to getting home again. I've got lots on my agenda to do to finish preparing for our new school year.

I'm making this dinner menu plan from memory; we'll see how reliable that is on recalling what is in the freezer and pantry when I actually get home.

I know I've got some pork ribs in the freezer though and I am really looking forward to cooking them. However, I am rather inexperienced with ribs. I've made them a few times in our crockpot--sometimes they're great, sometimes not so much. I guess it's the meat??? I would love to hear your tips on cooking ribs though. Please share with me!

Tuesday: Ribs, Loaded Mashed Potatoes, Baked Beans
Wednesday: Tostadas
Thursday: Grilled Tuna Melts w/salad
Friday: Homemade Pizza
Saturday: Grilled Chicken with Grilled Veggies

Sounds like a yummy week. I always steam my ribs first (which can be done in the crock-pot), and then I finish them on the grill or under the broiler with BBQ sauce. I mix soy sauce, juice, hot sauce, sesame oil, with water for the steam liquid. I seaason the ribs with a grill seasoning or rub before they go in the steaming liquid. Steam until tender, but not falling off the bones. Rub with BBQ sauce and then cook the sauce on with the grill or broiler. Flip and repeat on other side.
