So...last week's dinners went fairly well. Even though I mixed up my plans a bit, I made nearly all of the meals on my list (except for the teryiaki chicken).
I know I promised some of the recipes and today I'm sharing the black bean salsa with you. It's such an easy and delicious dish. You can use it as a dip, of course, but it also works as a side dish and a topping for tostadas. Plus it's healthy~you can't beat that!
Black Bean Salsa
(from my friend Ashley)
2 cans black beans, drained & rinsed
1 tsp. chili powder
1 heaping tsp. cumin

1 heaping tsp. cumin
1/2 med. onion, chopped
1/2 garlic clove, minced
3 tsp. soy sauce
3/4 cup salsa
1/3 cup fresh cilantro, chopped
1 small jar pimentos or equal amount of red pepper, chopped
1 can shoe peg corn (or white corn if you can't find shoe peg)

Mix all ingredients together except corn. This can be done a day ahead, if desired.

This week I am starting to focus on cleaning out my freezer. I have suddenly realized that I have let quite a few leftovers, etc., collect in there and I really need to use them up.
Here's what's on the plan for this week:
Monday: {game night} Tostadas (I'm making my own refried beans this week w/leftover pinto beans!)
Tuesday: {game night} Italian Pesto Soup (something I'm coming up with in order to clear out some leftovers in the freezer)
Wednesday: {trip to Kentucky}
Thursday: {trip to Kentucky}
Friday: Grilled hot dogs with grilled potatoes and....???
Saturday: {yard sale day} probably going out:)
