Ahh...'tis the season, isn't it? Lots of hustling and bustling going on around here!
I'm busy menu planning for the month. We have family that will be visiting for several days over the holidays and I will be making some dinners ahead to freeze in preparation. That way we won't be so worried about making dinner while they're here.
Of course, there's those special Christmas Eve and Christmas Day menus, too, and I'm also working on those. We're pretty traditional on Christmas Day, but I think I'm going to shake up the Christmas Eve menu a bit this year. I'm thinking a *Finger Foods Buffet* for that evening--sounds like fun, huh?!
This week, however, I'm keeping it fairly simple:
Monday: {leftovers}
Tuesday: Pan-Seared Talapia, Red Beans & Rice and a veggie
Wednesday: Tostadas
Thursday: Spaghetti Pie
Friday: Chicken Fingers, Mashed Potatoes, Gravy & a veggie
Saturday: {out on a Christmas adventure}
