Menu Plan Monday: January 3rd

I've declared this month to be *Pantry Clean Out Month*. I participated in a similar challenge last January (there may be one this year in blogland, but I haven't seen one) and I think it should definitely be an annual thing for me~maybe semi-annual! It's amazing how things pile up in the pantry and the freezer that I forget about. So my meal planning will be based on using up what I already have. I always do a pantry check each week before meal planning, but this month I want to hardly buy any groceries at all~just the essentials like milk, eggs, bread...

So here we go:

Monday: Beef Veggie Soup (using various leftovers from this past week and freezer) and buttermilk cornbread
Tuesday: Baked Salmon, Mashed Potatoes and Broccoli
Wednesday: Baked Potatoes
Thursday: Potato and Ham Bake
Friday: Tuna Cornbread Cakes with Potato Cakes (using leftover mashed potatoes from Tuesday)
Saturday: Hamburger Stromboli

I love this idea and think I will join you! Over the holidays I "decluttered" our upstairs freezer and started work on a pantry inventory (but failed to finish it). That, and cleaning out/organizing the downstairs deep freeze is on the list for today. Once I know what we have, I can begin to menu plan and I think I may go ahead and plan out an entire month. I usually go a week at a time, but I'd like to get a feel for what we can create using only the stuff we have (plus fresh produce where needed, and milk, eggs and bread as you mentioned). I need to get organized anyway before the baby gets here and make room in the freezer to put some meals in there for when he arrives.
