Back-to-{Home}school
Our First--and Hopefully Last--ER Trip
While we were sitting in our church service Sunday morning, one of the children's workers came to let us know that Mr. B had fallen and hit his head. It was so scary! He was almost inconsolable at first, but finally calmed down. Thankfully, we attend church with our pediatrician and he was able to check him out immediately. He thought Mr. B looked okay, but gave me some signs to watch for throughout the day--one of which was prolonged nausea.
Well, a couple of hours after the incident he threw up. Then he seemed better, ate a little bit and finally took a good nap. When he woke up he seemed fine, playing well and in good spirits. Then a little while later I found him lying in the living room floor complaining of his head hurting. Thinking that he might have a headache from the bump, I was going to give him some Motrin, when all of a sudden he threw up again.
After I put in a call to our doctor, we decided to take him to the ER to be checked out further. Luckily our doctor was able to call in a CT scan and we got Mr. B in fairly quickly. He was as good as gold at the hospital, too, I was so proud of him! Thankfully, the scan came out fine and our doctor thinks it was either just some delay on the nausea or possibly a coincidental stomach virus--which is also going around.
We are so grateful that he's okay, and so grateful to all of our friends and family who were praying for him.

The Big Reveal
Yea!! We finally got the kiddos' desks repainted! The school/play room is ready for school now. Good thing, too, since we start on Monday:)
You should have seen me painting this set in the backyard when our neighbors white dog jumped over the fence to come and play. Talk about pandemonium! LOL24 August 2009

Menu Plan Monday: Aug 24th~29th
This week I'm trying a few new recipes~Yea! Red Beans and Rice from the Fix It & Forget It cookbook. I love red beans and rice, but I've never made it at home. I think the kiddos will like it~they love beans.
Another new one will be the Pretzel Crusted Chicken Fingers and Zucchini Sticks w/Cheddar Spicy Mustard Sauce from Rachael Ray Yum-O. I'm hoping to get the kiddos involved in the preparation of this one and hopefully it will encourage them to eat better.

Tuesday: pretzel-crusted chicken fingers & zucchini sticks w/cheddar spicy mustard sauce (Rachael Ray's Yum-O!)
Wednesday: beef-veggie soup w/cornbread
Thursday: grilled salmon, baked sweet potatoes w/red, white & blue salad
Friday: eggs, bacon, biscuits w/chocolate gravy
Saturday: Sicilian pasta (a carryover from last week)

Busy, Busy, Busy
- finish decor in the school room (check!)
- register for a local homeschool group (check!)
- get the school room organized
- get the kiddos' school desks painted
- finish lesson plans
- get new library cards
So, don't worry, I'm around and will get back in a regular schedule again soon. That's one reason I'm looking forward to school starting:)

Fresh-From-the-Garden Okra
1. garden-fresh okra, in all it's glory.
(You definitely want the pods to be small--too big and they get tough).
2. I discard the top and the tip, then slice the rest into a bowl. Always cut up what looks like more than you need because it cooks up a little.
3. Next I toss it with flour, cornmeal (a little less than the flour) and some Cajun seasoning.
4. You just want it lightly coated.
5. Next, just cover the bottom of your skillet with canola oil, then pour in the okra. Fry on medium, stirring often so that it doesn't burn. It'll be nicely browned when it's done.
6. The beautiful end result! So tender and tasty!!
You've gotta try it.

Turkey Taco Cups & Menu Plan Monday
1 lb. ground turkey
Your fave taco seasoning (I use this one)
Flour tortillas
Canned black beans
Shredded cheese
Pico de gallo
Sour cream
Black olives
...whatever other toppings you like/have

Brown the ground turkey, draining off the grease. Add your seasonings according to the directions. Cut your flour tortillas into 4" circles. Spray or brush a little oil on them, tucking them into the cups in a cupcake pan. Bake them 8-9 minutes or until crisp; cool. Serve with the ground toppings and any other toppings you desire. I enjoyed filling mine with black beans, turkey, cheese, sour cream and pico de gallo! Yum-O!! Next time I plan to try them with corn tortillas or maybe tostada shells~I think the corn would taste delicious!

Oh, and believe it or not, my friend Laura was out shopping, too, and saw an open casket that someone was selling in their front yard. I'm not sure if it was *new* or *like-new*:)
I know, I know, you're wishing you had been with us in Hillbilly Heaven, right? lol We did have a lot of fun though! And I did find some treasure among the junk: four more blue & white state plates to add to my collection.

Gearing up for School
- Phonics and Reading (Horizons)
- Handwriting (Italics)

- Literature (reading aloud various children's classics)
- Science (Singapore)
- Geography (Galoping the Globe)
- History (different unit studies, beginning with American)
- Art (various books on various artists, plus projects)
- Music (introduction to composers, plus beginning piano lessons)

I am sure we may make some adjustments along the way and there will also be fun unit studies, too, but this will be my blueprint for the year. I am also starting some K5 level workbooks with Mr. B even though he's only 4 and he is SO excited~it's really cute!
If you homeschool, I'd love to hear about your plans as well. A while back I had printed off a post by a fellow blogger who is also a homeschooling mom that really helped me with my planning. It's definitely worth the read and you can check it out here. (Thanks, Heidi!)
