It's that time of the week again. I hope you had a good week of menus last week~we sure did. I have to say the highlight meal of the week was Thursday night. It was pure country home cookin' goodness! We had macaroni & tomatoes, fresh green beans with new potatoes, Ozark Mtn. Succotash and cornbread. Oh.My. I hate to tease you like that, but I just had to share.
This week's key phrase is *keep it simple*. As in, simple meals. It's going to be a bit of a different week meal-wise. The kiddos will be attending vacation Bible school each evening this week, so meals will need to be a little earlier than usual. For some reason, the earlier I have to plan dinner the simpler I need it to be. I think that must be because the time sneaks up on me:)
So here we go...
Monday: Chicken Fingers and Fried Okra
Tuesday: Pigs-in-Blankets and Baked Beans
Wednesday: Tostadas
Thursday: Macaroni & Cheese with Peas & Carrots
Friday: Pizza
Saturday: Tuna Melts

Your grandmother's mac and cheese sounds delicious. Love that the cheese is cubed and not shredded -- saves some time!
