Last week some friends of ours gave us a bag full of yummy apples from the tree in their yard. It reminded me of when I was a kid and we had an apple tree. I loved that tree! I loved to climb it all summer and then in the fall we would pick those apples and my mom would make the most delicious apple butter you've ever tasted. Mmmm... Well, today we're still having some of that gray, rainy weather and something fall-ish and apple-y just sounded so good. So I whipped up one of my favorite cakes.
Chopped Apple Cake

1 1/2 cups vegetable oil
2 cups sugar
~Mix the above ingredients together in mixer.
3 cups sifted flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
~Blend well. It will be a very stiff batter.
Next stir in:
3 cups chopped tart apples
Mix them in well.
Place 2 layers of waxed paper in the bottom of a bundt pan,
then pour in the batter. You can also bake this in two layers.
Bake @ 350F in a bundt pan for 1 hour and 15 minutes
(less for layer pans). Prepare yourself to be practically
tortured by the heavenly scents that will
be floating out of your oven! When it's finished,
invert it onto a plate, let cool. Then drizzle a powdered
sugar/milk glaze over the top
(if you can even wait that long to have a piece!).
