It's that time of the week again! How did your dinners go last week? Ours were really good! It seemed like every night was so yummy (even if my picky kiddos are driving me a little nuts~ha!). I even got my hubby to eat a delicious pork roast (he has pork issues:) and he liked it! So all in all, it was a successful week of dinners.
This week I'm trying a few new recipes~Yea! Red Beans and Rice from the Fix It & Forget It cookbook. I love red beans and rice, but I've never made it at home. I think the kiddos will like it~they love beans. Another new one will be the Pretzel Crusted Chicken Fingers and Zucchini Sticks w/Cheddar Spicy Mustard Sauce from Rachael Ray Yum-O. I'm hoping to get the kiddos involved in the preparation of this one and hopefully it will encourage them to eat better.

The Sicilian Pasta is one I found in Woman's Day magazine. It looks super easy and healthy, so let's hope it's a hit, too.
Monday: red beans & rice (Fix It & Forget It)
Tuesday: pretzel-crusted chicken fingers & zucchini sticks w/cheddar spicy mustard sauce (Rachael Ray's Yum-O!)
Wednesday: beef-veggie soup w/cornbread
Thursday: grilled salmon, baked sweet potatoes w/red, white & blue salad
Friday: eggs, bacon, biscuits w/chocolate gravy
Saturday: Sicilian pasta (a carryover from last week)

You're so right! All I added to the crockpot was onions, s & p, a little bit of Dale's Sauce and water. Every bit as good as a beef roast!
I've never tried to make red beans and rice. That's what we had in New Orleans when we were at Pat's mom's house that summer I just posted about after 4th grade. I ate it (with severe warnings before we went that I had to eat whatever I was given no matter what it was). It was good. I've only had it once or twice since then. I should try to find a good recipe, or you'll have to share yours.
Pork roast is a little different cut that pork loin, but not to different. They're both really good!
I'll let you know how this red beans & rice recipe turns out--it's a new one for me:) If it's good, I'll definitely share!
