I have a new recipe that I'm trying this week. A friend, Amanda, sent it to me and it sounds great! I hope it will be a hit with the kiddos:) I'll let you know!
Tuesday: Stromboli (see recipe below)
Wednesday: grilled salmon, baked potatoes & veggies
Thursday: macaroni & cheese with veggies
Friday: baked chicken, mashed potatoes & veggies
Saturday: pasta
Sunday: out-to-eat
Quick & Easy Stromboli
(from my friend Amanda)
2 eggs, separated
2 Tbls. vegetable oil
1 tsp. oregano
1 tsp. parsley
1 tsp. garlic powder
2 cups shredded cheese (your fave)
Meat for filling*
Veggies (optional)**
1 can pizza crust
Parmesan cheese

Preheat oven to 350F. Mix egg yolks, oil, oregano, parsley and garlic powder in a small bowl. Roll out pizza crust onto a greased cookie sheet. Press the dough out just like you would when making pizza. Spreak the egg mixture over the dough--it will only be enough for a thin layer. Layer in your filling choices down the middle of the dough, like you are making a burrito. Once you have your filling in, bring the edges of the pizza dough together to seal the meat and cheese inside. Turn the stromboli over so that the seam is on the bottom. Brush with the egg white. Sprinkle with Parmesan cheese. Bake at 350F for 25 minutes, or until golden brown.
This is great served with dipping sauces such as Ranch dressing, marinara or garlic butter.
*You can use deli turkey or ham, pepperoni, etc.
**sauteed onion, bell peppers, mushrooms, olive, etc.
