Well, I'm giving myself an extra challenge this week. I am actually going to try to plan my lunches. Not breakfasts yet though...I mean, one thing at a time already:)
I admit it: I am not very creative when it comes to lunch. There's the turkey sandwich, Spaghetti-o's, turkey sandwich, canned soup, turkey sandwich.....you get the picture. Now, my kiddos really like turkey sandwiches, so generally they're satisfied. But me? I am just not much of a sandwich person at all. Unless they're from places like Firehouse Subs, Quizno's or Subway. And that's just not a frugal daily choice. Too bad, right?
So here goes with the lunches & the dinners:
Monday
Lunch: Tomato & Red Pepper Soup*
Dinner: Slow Cooker Turkey & Dressing (I know, I know...but I'm just hungry for it!)
Tuesday
Lunch: leftover soup w/grilled cheese sandwiches
Dinner: Steak Fajitas with rice
Wednesday
Lunch: tuna salad
Dinner: Cincinnati-style Chili 5-way
Thursday
Lunch: Chili dogs
Dinner: PW's Ranch-Style Chicken, baked potatoes & French-style green beans (my children's new fave veggie:)
Friday
Lunch: macaroni & cheese
Dinner: {birthday party}
Saturday
Lunch: {at a wedding}
Dinner: leftovers

Lunch tends to be a bit hodge-podge for us every day.
I make fresh hummus nearly every week and *I* eat it almost daily. The kids don't eat it quite *that* much, but they do like it.
If you want, I'll send you my recipe to give a try.
Your menu sounds delicious.
I would love to have your hummus recipe. I've never made it, but I have had it before and it's good. I'm all about yummy AND healthy:)
