While I love to plan and cook dinners for my family, lunches are hard for me to get inspired over. I'm usually very busy right up until lunchtime and don't have time to really "prepare" something that appeals to me. And by "appeal" I mean something hot or freshly-made. Run-of-the-mill sandwiches have never been my thing--not even as a child. My children, however, LOVE sandwiches. And it's a good thing because they are easy to whip up.
So while my kiddos are generally eating sandwiches for lunch, I do my duty and eat leftovers or just snack around. It's never very satisfying, but then again I have dinner to look forward to, right?
This week though my hubby has surprised me by coming home and making me special lunches on Monday and Tuesday! Ladies, it's worth it to get your husband on Pinterest! He gets totally inspired to cook when he sees all of those yummy food links!
2 tbsp. mayo
1 avocado, chopped
4 eggs, boiled and chopped
salt and garlic salt, to taste
dash of smoked paprika
2-10" tortillas
1 tbsp. butter

Mix all together well. Place about 1/2 cup of mixture in center of a tortilla

(we used whole wheat) and wrap envelope-style. Melt butter in a skillet
and place wrap in skillet fold-side-down. Toast for about 30 seconds on
each side (until lightly browned) and serve. Ahhh-mazing!!
On Tuesday he made his "special" sandwich for me (see, I do like some sandwiches!) which we have dubbed "The Big Mess". There really isn't a "recipe" for these, but I can sort of tell you how to make them. (Since this is his special sandwich, I try not to learn so that he'll always make them for me...heehee). These are SO delicious!!

(or whatever cheese you have)

special sauce
(butter, mustard, brown sugar mixed to your liking)

egg/milk mixture for dipping bread

3. assemble your sandwich(es)with
meats, cheese, egg, and sauce

Today my lunch treat is for him to come pick up the kiddos and let me go do a little shopping on my own. Now that is a treat! Tomorrow we have a special lunch out planned with friends and then on Friday we have a Hot Date!! What a fun Valentine's week!!
