This week I've planned really child-friendly dinner menus since my hubby is out of town. However, I want them to be menus that I enjoy, too. Last night we had one of my favorites, too: individual chicken pot pies.
Now before you decide that this is just another variation of the same thing, let me tell you it's a tad bit different--it has cheese! That's always a plus in my book and especially in my kids' books! Two kinds of cheese, as a matter of fact! My son (who is by-far the pickiest in our family) loves this meal and eats his whole bowl. That makes me happy:)
Individual Chicken Pot Pies
2 cups frozen mixed vegetables
1 cup of shredded, cooked chicken

1 can cream of chicken soup
(I prefer to use this recipe)
Dash of onion powder
Dash of celery salt
1/2 cup shredded cheddar cheese
1 cup flour
2 tsp. baking powder
4 oz. cream cheese
1/4 cup milk

Preheat oven to 400F.
Mix together vegetables, chicken (or turkey), and soup in a medium bowl.
Divide mixture evenly between 4 (2-cup) ovenproof bowls*.
Top each bowl with shredded cheese.
Mix flour and baking powder together in a medium bowl.
Cut in the cream cheese with a pastry blender (or a fork) until
the mixture resembles coarse crumbs.
Stir in milk with fork until dry ingredients are moistened and a
dough forms.
Divide dough into 4 parts. Pat out each part into 5" circles on a
lightly floured surface. Prick tops several times with fork to allow
steam to escape. Place dough rounds on top of each chicken mixture.
Place bowls on a baking sheet for easy in-and-out from oven and
bake for 25-30 minutes or until crust is nicely browned.
*(If you don't have ovenproof bowls, place chicken mixture in a deep-dish
pie plate or a 1-qt. casserole dish. Roll out biscuit dough into a 9" circle
and bake as directed).
