Well, last week was a great week with the menu planning! It was so good to be back on track in the kitchen after the craziness of the holidays.
And I enjoyed meeting my new kitchen challenges for myself : 1.) fix at least one meatless meal a week and 2.) cook a new recipe from one cookbook in my collection. You can check out some of last week's yummy meals here (chicken enchiladas), here(cornflake-crusted tilapia) and here(feisty fajitas).

I have launched a Free Menu Planner you might like to check out. Have a great week!
I look forward to hearing about the pork stir fry....sounds great.
That loaded bbq potato casserole is perfect for those bbq leftovers! And, just so you know, the casserole freezes well, too. Happy cooking this week:)
The acting is great and the storylines are always good. They aren't action packed...more like mysteries...which I know you like :-)
The blue bowl reminded me of spring too. I need a bit of spring in the house now because I have spring fever already!
